Mom’s Potato Soup

When my middle daughter moved to NYC after she got her graduate degree in she was very proud and wanted to make it on her own but struggled. I mentioned that she should make the potato soup recipe that she loved and she said it wasn’t in the budget this month. As a mother you know what I did … I shipped everything she needed for the soup, even a 5 lb bag of potatoes and enough cash for her to buy the perishable items. In my haste to get it to UPS, I sent her my recipe card so now when I make the Potato Soup recipe I have to call her.

Potato Soup
2 celery stalks
chopped 1 small onion,
diced2 carrots,
Sauté the above in 2 tablespoons of butter until tender.
Add 3 cups of water, 5 chicken bouillon cubes, 3/4 teaspoon seasoning salt, 1/2 teaspoon thyme, a dash of garlic powder, 1/2 teaspoon of rosemary
Peel and dice 5-6 Potatoes, add to pot. Simmer 20 minutes until potatoes are tender. Use an immersion blender to purée or use a potato masher.
Add 2 cups of milk,1cup grated cheddar cheese
